We’ve all been guilty of over-indulging at an all-you-can-eat buffet, and Sailmaker’s seafood buffet certainly inspires that with their range of dishes. The restaurant’s dining area is divided into 4 distinct sections of food.

The Hyatt Sailmaker Roast Pork

The hot food section included a small selection of dishes on rotation – one night was steamed broccoli, tortellini and roast potatoes, another night was meatballs, rice and curry. The section also includes a roast and gravy. One night was a roast beef, which was tender and moist. The other night was a roast pork, which was also juicy and well-seasoned with a Chinese spice rub, though the crackling was a little hit-and-miss with some crunchy sections and other not so much.

There were two choices of soup –  Asian seafood or pumpkin soup (which were both a little watery) and also bread and butter.

The seafood section was the main attraction, with mussels, tiger prawns, blue swimmer crabs and Sydney rock oysters. The oysters and prawns were the most popular being tasty and fresh, but the crab was the opposite and the a lot of the mussel shells were unopened.

There was a nice variety of sauces including tartare, thousand island and wasabi. The fish of the night was two huge salmon that were cooked perfectly.

The cold food section contained a wide variety of salads with raw and cooked vegetables, pasta and beans. There was also a wide selection of deli meats and cheeses.

I was really impressed with the dessert section, that had a variety of tarts and cakes, and there were jars of chocolate chip and Anzac cookies, as well as cake pops. On another night, there were raspberry lamingtons and a large bowl of creamy coconut sago. All the desserts were decent, not too sweet and the tarts had a crumbly, delicious pastry.

Recommendations would be the coconut tart, the lemon meringue tart, the fruit and apricot tarts, the sago and the decadent chocolate tart.

The sitting is for 2 hours, but if they’re not too busy you can indulge for as long as you like.
